Established in 1997 in Osaka Prefecture, Minoh Beer is a family-owned craft brewery internationally recognized for its quality. Led by the Ohshita sisters, every bottle balances character and depth.

Founded in 2019 in Wakayama, Orizé is a pioneering nano-brewery — the world's first to brew beer with rice koji. Gluten-free, fermentation-driven, and rooted in domestic ingredients.

Bronze Medal Winner – Gluten-Free Category, International Beer Cup 2024. Crafted using a world-first innovation: koji-fermented rice malt. This beer is brewed with Orizé Malt, a unique ingredient made by cultivating koji on germinated rice husks, then kiln-drying them to bring out a deep, roasted character. The result is a gluten-free craft beer with exceptional complexity and depth.

Orizé Brewing's Signature Gluten-Free White Ale, Reimagined. This world-first beer is brewed entirely without malt, using rice koji as its core ingredient. A bold evolution of Orizé Brewing's flagship Japanese White, this No.9 edition undergoes primary fermentation in oak barrels, imparting a depth and complexity not achieved through standard barrel aging.

A Bold, Gluten-Free Luchuensis Sour IPA Brewed with Rice Koji. A truly unique sour IPA, brewed with a combination of black koji and kiln-dried rice koji. This innovative beer delivers a vivid tropical tartness, as if fresh island fruits were squeezed right into the glass.

Gluten-Free Rice-Based IPA from Another World. Crafted using a world-first fermentation technique with Orizé Malt—rice malt made by cultivating koji on germinated rice husks. PARALLEL IPA offers fruity aromas reminiscent of yellow peach and pear, paired with a clean bitterness that surprises with its depth.

High-ABV Belgian-Style Golden Ale – Brewed Without Malt, Using Rice Koji. A bold, golden ale brewed without any malt—only rice koji is used as the fermentation base. This beer undergoes primary fermentation in oak barrels, followed by bottle conditioning for a naturally carbonated finish.
In the mountains of Nose Town, Akishika has crafted sake since 1886. Master brewer Hiroaki Oku grows his own rice using natural farming — pure expressions of terroir, bottle by bottle.

Pure & Earthy. Robust, deeply expressive, with natural umami and vibrant acidity. Best with hearty dishes. Akishika's Junmai sake is robust and deeply expressive, showcasing the natural umami of the rice. Brewed with low-polished rice and traditional methods, it has a bold structure with pronounced acidity, giving it excellent food-pairing versatility. Its full-bodied profile reflects the brewery's farm-based philosophy and the terroir of Nose Town.

Refined & Aromatic. Elegant fragrance, silky mouthfeel, layered umami. Best with delicate Japanese cuisine. Akishika's Junmai Daiginjo is a premium expression of their craft, using highly polished rice and careful temperature control during fermentation. Despite its refined character and floral, melon-like aromas, it retains the complexity and natural essence of the rice.

Toppings include tender slices of chashu pork, aromatic green onions, house-made chicken meatballs (tsukune), and sweet onions that enhance the broth's natural richness. This comforting bowl features a rich, umami-packed broth made with Kaachan Miso—a lovingly handcrafted miso from Toyono Town in Osaka. Fragrant bara nori (roasted seaweed) finishes the bowl with a subtle coastal aroma. Don't let the word 'vegan' fool you—this is a truly rich and satisfying bowl of tantanmen, full of depth and umami. The broth is crafted without any animal products or fish. Instead, we combine a savory base of shiitake mushrooms and kombu seaweed with creamy soy milk and sake kasu (sake lees) from the renowned Akishika Sake Brewery. The result is a smooth, mellow soup that warms you from the inside out. We use Kāchan Miso, a lovingly made local miso from Toyono Town, to give the bowl a home-style richness. On top, our special vegan 'meat miso' is made from pea-based plant protein and enhanced with a secret ingredient that brings everything together beautifully.

A long-standing customer favorite, this richly flavored miso tsukemen features a balanced blend of white miso and spicy miso in a deeply satisfying dipping broth. Stir-fried vegetables add a smoky aroma that pairs beautifully with the soup, while our house-made garlic oil (mayu) brings extra depth and umami to every bite. A flavorful, hearty bowl made for miso lovers.

This deeply flavorful bowl features a bold blend of white miso and spicy miso in a hearty soup that's both mellow and packed with umami.
